Pumpkin Chocolate Chip Cookie Ice Cream

Fall weather can be tricky - cold mornings, hot days, chilly nights. What to do when it's officially Fall, but still feeling like summer?

Well, make some Fall flavored ice cream and cover both bases!

Speaking of bases -- a great ice cream base recipe is something to keep in your back pocket. It can be customizable in countless different ways by adding flavors and mix ins. This ice cream base recipe is adapted from NYT Cooking - however, I tweaked it to add pumpkin, all of that pumpkin spice deliciousness, and loads of chocolate chip cookies.

This does require an ice cream maker, and I have not attempted it without one.

Recipe:

2 cups heavy cream

1 cup whole milk

3/4 cup granulated sugar

2/3 cup pumpkin puree

2 tsp pumpkin pie spice blend

pinch salt

4 egg yolks

1 teaspoon vanilla extract

1/2 cup chocolate chips

4-5 large chocolate chip cookies, crumbled
